healthy pho - only the best ever

I have fallen {HARD} in love with Pho. We have this super yummy little Vietnamese place near our house and we find ourselves running down there all too often to grab a bite, but as usual, if I can find a way to recreate these delicious dishes, sign me up. I hope you all enjoy this recipe!
